INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).
  2. Pat the tilapia fillets dry with a paper towel.
  3. Sprinkle a bit of  salt  on both sides of the tilapia fillets.
  4. Mince the garlic cloves and fresh ginger.
  5. In an oven-safe skillet, heat  coconut oil over medium heat. Add minced garlic and ginger, and sauté until fragrant.
  6. Stir in the unsweetened shredded coconut and cook for another minute until the coconut is lightly toasted.
  7. Coat each tilapia fillet with the ginger-garlic-coconut mixture.
  8. Drizzle the  coconut aminos over the tilapia fillets.
  9. Sprinkle chopped scallions over the fillets.
  10. Bake in the preheated oven for about 15-20 minutes or until the tilapia is cooked through and flakes easily with a fork.
  11. If you prefer a bit of browning on the top, you can broil the tilapia for an additional 2-3 minutes, keeping a close eye to prevent burning.
  12. Remove from the oven and serve the Gingered Glazed Tilapia immediately.
