INSTRUCTIONS

  1. In a blender or food processor, combine chopped apple, scallion, fresh ginger, chopped garlic, olive oil,  toasted sesame oil,  apple cider vinegar,  fish sauce, and  coconut aminos. Blend until you have a smooth marinade.
  2. Pat the chicken thighs dry with paper towels. Season both sides of each chicken thigh with  salt  and  ground black pepper .
  3. Place the chicken thighs in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure it’s well coated. Marinate in the refrigerator for at least 30 minutes, or ideally, for a few hours.
  4. Preheat your oven to 400°F (200°C).
  5. Heat an oven-safe skillet over medium-high heat. Sear the chicken thighs on both sides until browned.
  6. Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken thighs are cooked through.
  7. Ensure the internal temperature of the chicken reaches 165°F (74°C).
